Our Barrel-Aging Process
We take pride in our barrel aging process for our whiskeys, which we age for a minimum of 3 to 4 years. During this time, we continuously taste every 6 months to ensure that each barrel reaches its optimal point for our final product.
For our latest project, the 3rd batch of our ‘304 Mountain Blackberry Bourbon’, we chose to age it for 40 months and adjust the blackberry extract down slightly to let the bourbon shine. The result is a smooth and flavorful whiskey with a touch of real blackberry extract that perfectly embodies the essence of Appalachia.
We're also excited to announce the upcoming release of our 4-year-old "304 Heritage Bourbon" this fall. This highly anticipated wheated bourbon will be aged for four years, giving it a rich and complex flavor that is sure to please even the most discerning whiskey connoisseurs.
In addition to the 304 Heritage Bourbon, we also have a single barrel 6-year bourbon that we have been aging for a special release. This bourbon will have been aged for six years, allowing it to develop an exceptional depth of flavor and complexity that is truly unique. We can't wait to share it with you!
